Ingredients:
*White mushrooms — 500g. I use th whole mushrooms.
*3 Potatoes
*1 Onion
*Soup stock or water 1.5 L. I use water.
*Dairy cream 10% — 200ml
*Parmesan cheese — 50g
*Salt, peper — to taste.
Instructions:
*Cut all vegetables and mushrooms.
*Simmer potatoes for 20 min
*Fry onion and add mushrooms. Fry all for 20 min.
*Next stage — add mushrooms to potatoes. Bring to the boil and boil for 5 min.
*Take off form a stove, make a puree. Using a hand blender.
*Add dairy cream an bring to boil all ingredients.
*As it is boiling, add cheese (fine grate). Boil for 5 min, stir at a steady pace
Ready!
Roll with tuna
Ingredients:
*One tortilla.
*2 eggs
*Tuna — 80-90g
*1 big cucmber
*5-6 Lettuce leaves
*Cheese (to taste) — 50g. With cheese much more tasty.
*Salt — to taste. I don’t use.
*Dressing to taste: mayonnaise, sour cream, сcream cheese, Greek yogurt, etc.
Instructions:
-Spread tortilla with dressing.
-Place lettuce leaves, cucumber (sticks), tuna (mash up), cheese (to grate).
-Fry the omelette: beat eggs untill smooth by fork in a plate, add salt and peper. Pour on a pan and clothe a lid. Fry for 1 min. As it is reary make a roll on a pan. Take it carefully and place on tortilla.
-Roll up tortilla and cut on pieces.
Ice cream with peanut and strawberry confiture
Ingredients:
*Heave cream 33-35% — 500g
*Сondensed milk — 380 g
*Berries to taste — 300g (200g for ice cream snf 100g for filling). If you want to make ice cream with more berries , use 300g for ice cream only, without filling.
*Strawberry or blueberry jam.
*Toasted unsalted peanut
Instruction:
+Make a puree. If without stones — rice.
+Cut berries for filling. You can skip this stage and decorate the ice creame with berries before serve.
+Beat cold heavy creame untill froth up.
+Add condensed milk and mix up.
+Approx 1/3 ice cream mix up with berry puree (if you want you can use 2 flavours as in my example).
Make the ice cream:
*Pour a small layer of strawberry ice cream, sprinkle berries (optional), peanut, jam, pour the rest part of strawberry ice cream.
*Again sprinkle berries, add peanut and sprinkle with jam.
*Pour a layer of vanilla ice cream, berries, peanut and jam.
*Pour the rest of vanilla ice cream.
*Chill for 3 hours.
Attention! Ice cream meltins quickly.
Meringue Roulade
Ingredients:
For meringue:
+Egg whites -200g, 5-6 eggs
+Sugar powder — 300g
+Corflour — 40g
+Lemon juice — 1 tsp
+Flaked almonds — to taste, optional.
+Vanilla extract — 1 tsp.
For the cream:
+Heavy cream 33-35% — 70g
+Cream cheese — a big plastic jar
+Mascarpone — 250g
+Sugar powder -60g
For the filling:
+Berries — to taste.
+Strawberry confiture.
Instruction:
Meringue crust:
1.Blend room temperature egg whites with sugar powder. Add vanilla extract and lemon juice in the process of blending.
2.Blend untill froth up (for 15 min approx). Add cornflour and mix some seconds.»
3.Spread egg whites batter on baking sheet, sift flaked almonds (to taste).
4.Bake for 30-40 min at 150C.
Cream:
1.Mix cream cheese with Mascarpone. Add heavy cream and sugar powder. Blend the batter untill needed консистенциии. 1 min max.
Make a Meringue Roulade:
1.Turn the Meringue crust on greaseproof paper or towel.
2.Spread with cream generously. Leave a little bit creame for decoration.
3.At the edge of crust put confiture only. Make a line on the edge.
4.Sprincle berries. In this case I used a bit berries, I recommend to you to use much more berries.
5.Roll it up. Use greaseproof paper or towel in order not to break the crust.
6.Decorate with cream and put into the fridge for several hourts (better — overnight).
Decorate with berries before serve.


Cheese cake

*Cream cheese — 600g
*Heavy cream 33-35% — 200 ml
*3 eggs
*sugar powder — 150g
*Vanillin — 10g (optional)
*Add into springform pan and press, making a bottom. Put to the fridge. You can make walls or not.
*Ingredients for the crust should be room temperature.
*Mix cream cheese and sugar powder, not blend! Use spatula.
*Add eggs one-by-one and mix, not blend! Use spatula.
*Add heavy cream and mix, not blend! Use spatula.
*Preheat the oven untill 200С.
*Pour cheesy batter into springform pan and put to oven.
*Reduce the temperature untill 110C after 15 min and bake a cheese cake for 1,5 hours.
*Then bake for 5-10 min at 200C again.
*Switch off the oven but do not take out the cake. Open the oven and lets cake chills for 1 hour in the oven.
*The best way — to place into the fridge overnight.
Decorate — to taste.


Granola

Ingredients:
*Oats — 120g
*Nuts — 50g
*Sunflower seeds or pumpkin seed — 50g
*Honey — 40g
*Vanilla sugar — 2 g (optional)
*Сupped hands of raisins.
*1 ripe banana.
*Sunflower oil — 20g
Instruction:
+Blend banana.
+Mix all ingredients up.
+Place Granola batter on baking paper.
+Bake for 15-20 min at 180-200C.
+Take out, cut or break on cubes. Eat with milk, tea or yoghurt.
Banana fudge
Ingredients
*Ripe banana — 140g
*Cocoa — 25g
*Honey — 15g
*Peanut butter.
*Coconut butter — 70g
*Vanilla extract — optional
Instrustion
*Make a puree from banana.
*Melt coconut butter in microwave.
*Mix all ingredients up.
*Pour into moulds and refregirate for 30 min.
*Take out the dessert and cut.
*Please be careful! It is delicious!
Healthy homemade sweets with nuts and crisp breads without sugar
Ingredients:
*1 ripe banana (150-155g)
*Crisp breads — 80g
*Nuts (I use almond) — 50g
*Cocoa — 20g
*Honey — optional.
Instrustion:
1. Blend Crisp breads and nuts with cocoa (if you wish) , crumb will be chocolate.
2. Leave small part of crumb for covering.
3. Blend banana and mash properly. Mix with dry ingredients.
4. Make bаlls (sweets). It is better to do wet hands.
5. Each sweet smoother in crumb.
Strawberry trifle
Sponge cake:
+1 egg
+Sugar — 40g
+Flour — 40g
+Baking powber — 0,5 tsp.
+Oil — 20g
Filling:
+Strawberry — 150g
+Sugar — 30g
+Cornflour — 1 flat tbsp.
Cream
+Viollette cheese — 180g
+Heavy cream 30-35% — 50g
+Sugar powder — 40g
Instruction:
Sponge cake:
*Beat up egg with sugar untill cream-coloured.
*Add oil into beaten egg and blend up on a low speed.
*Sift all dry ingedients, add to egg mixture and mix all up.
*Rour out all into a rign 16 — 18 диатме
*Bake for 15-20 min, 180 degrees. The ready sponge cake should be elastic.
*Free cake from a ring and get cool.
*Make small pieces from cake using your hands.
Filling:
*Heat strawberries with sugar. Big pieces of berries cut into 2-4 parts.
*As you see steam , add cornflour.
*Mixture is getting white colour , continue mix intill boilning.
*Boil for 30 sec. Mixture comes back its nature colour. It means that cornflour did his job.
*Take off from a hob and cool.
Cream: Mix all ingrediens for 1 min.
Making a trifle:
*Spread sponge cake
*Next layer — strawberr filling with berries.
*Next layer — cream (not too much).
*Again put sponge cake and strawberries.
*Make a cream hat.
Decoration — to taste.
Chocolate mousse
Ingredients for 3 cups:
+Heavy cream 30-35% (№1) — 100g
+Milk chocolate — 50g
+Dark chocolate — 100g
+Gelatine — 6g
+Heavy cream 30-35% (№2) — 160g
Instruction:
1. Soak gelatine in a very old water.
2,Heave cream #1 brings to the boil and take off the heat.
3.Add gelatine . Gelative should totally escape in the hot heavy crem.
4.Pour hot heavy cream on milk and dark chocolate, wait utill all ingredies smooth.
5.Blend heavy cream #2 up untill couse cream condition.Haavy cream does not fix a shape.
6.As temperature of chocolate lequide is abot 30-35 degrees, unit with blended heavy cream #2, blend all ingrediens up untill smooth.
7. Pour into moulds.
8.Regrigerate for 1 hour.
9.Decoration — optional.
I recommend to decorate with cocoa and fresh berries or nuts.
